Cheesy Broccoli Chicken Foil Packs

 *I continue bringing this to the front of my recipe blog because everyone that has tried this recipe since 2012  seem to have really enjoyed the taste and simplicity of preparation.  Unbelievable response!!!!
You tell me what you think...(by the way...try  putting them on the grill so you don't have to heat up you house this summer)
Cheesy Broccoli Chicken Foil Packs (original post)
I have made hoboes with ground beef for years, but found this and couldn't wait to try and I was NOT disappointed.

Ingredients:
1 package Stuffing mix; chicken flavor
1 1/4 cups Water
4 Boneless skinless chicken breast halves
4 cups Broccoli Florets
1 cups Shredded cheddar cheese
4 slices COOKED bacon; crumbled
4 tbsp Ranch dressing divided
- Oven to 400
Below is a picture of the ingredients ready to prepare and go into the foil!

Directions:
 - Spray 4 large sheets of heavy-duty foil with oil.
 - Combine stuffing mix and water.
 - Spoon 1/4 of the stuffing mixture onto the center of each foil sheet.
- Top stuffing with a 6oz. chicken breast half.
 - Top chicken with 1 c. broccoli.
 - Sprinkle with 1/4 of the cheese and 1 slice of your already prepared bacon, crumbled.
 - Drizzle with 1 T. ranch dressing
 - Bring up foil sides and fold to seal, leaving room for heat circulation inside
 - Place packets on a cookie sheet and bake 35-40 mins (depends on the size of your chicken breasts)
- Remove packets and let stand 5 mins
 - Cut sits in foil for steam before opening.

Here is the finished product right out of the oven.  Is your mouth watering yet?  Mine was watering just smelling it bake!

You could eat it straight from the foil...I slid it to a dinner plate...yum!

Most people would say the above is the finished product...but in all actuality - an empty plate says it all!  This is for sure a keeper and one that will be made again and again at this house!

Not sure the answer to this question since I've never made it on a grill...but I would say to judge it by how long you would normally cook your chicken on the grill...I'm thinking it would be around the same amount of time as in the oven...but hopefully someone that has cooked them on the grill before will answer your question on here. Happy cooking!

Grill this recipe at our tailgates and it's great , yes 35-45 min on a charcoal grill indirect heat. I do the ground beef patties with green beans sliced potatoes and mushrooms too!

I am gluten free so I did this with rice I precooked seasoned with chicken broth and poultry seasoning. Cook rice till liquid absorbed but not soft then continue with directions.

I made this for supper tonight and it was awesome. So much flavor. I did put the chicken on the grill, 5 minutes on each side and then cooked them in the oven for 25 minutes. My guests said it was the best chicken dinner they ever had. Will be making this again soon. Quick and so easy to make.

This might sound dumb but,... you put the chicken alone on the grill and then assembled it to cook in the oven right? Since you said you cooked them 5 minutes each side. :) It sounds like it would turn out less white and rubbery by doing that! Thanks

You can make this without stuffing..I put my chicken breast in the foil and sprinkle it with seasoning salt..then wrap..wrap my potato after puncturing it and then set the oven at 325..go off to church and when I get back all I have to do is warm a vegetable or have salad and dinner is done.. by the way, I have let this bake up to an hour and a half and it does not burn, but the meat will melt in your mouth..this is with the skin on, but you can peel the skin off after it is cooked..

It will be a different dish without the stuffing, but season the meat to your taste with the seasoning you are wanting and maybe add another vegetable along with the broccoli ... close up the foil and cook. If it is a potato that you have added, make sure that you have sliced it thin. Hope that helps Stephanie.

My friend made this for us the other day. She made a couple with stuffing and one with cut up potatoes instead of the stuffing. Cooked all the same way and time, my friend with the potato LOVED it. I loved the stuffing! Making it with cut up chicken this weekend for our Christmas party.

I would be careful about adding the chicken in the packet ahead of time as raw chicken can contaminate other foods. But the rest of the food you should be ok to prepare ahead of time.

I would use your own judgement ... you are dealing with raw chicken - so be very careful and aware of that. It is so easily put together, you could have your ingredients prepared ahead of time and throw it together in less than ten minutes...if time is your concern. Enjoy!

The first time I made this I forgot the ranch, and I never missed it, I found there was enough flavor between the bacon, cheese and stuffing that it didn't really need it.

I saw someone ask if you can refreeze uncooked chicken. I have wondered this before and looked it up on USDA's website a while ago. Do it in the order of the recipe with the dressing on the bottom. I use fresh broccoli, but I would think you could also use frozen.

I cut up bacon and fry it up, and then freeze it about once a month. Then I have bacon bits ready to go whenever I need them.

Just made this! Except I used rice instead of stuffing, and kens lite Italian dressing, and frozen chopped broccoli! It was delicious! Will definitely make it again. Might even try the stuffing. But I was trying to keep it a little more weight watchers friendly :) thanks!!!

I would say that cooking in crock pot is a possibility, but it doesn't take that long to bake in the oven. Does anyone else out there have any crock pot suggestions?

Put the packets in the crock pot on low, 4 to 5 hours, or on high for 1-2 hours. I use foil packets all the time, no cleaning the crock.

My husband and I are doing low-carb as well and we're going to try to do this with quinoa this week. We're not big broccoli fans so we'll use Rotel, I think. And since we're truck drivers, we'll be using the crock pot. Will probably throw in some onions slices, too. Can't wait!

There has been some discussion about doing these on the grill. I usually do foil type dinners for about 45 minutes (for thicker pieces of meat I do them a little longer). I also put shredded cabbage on the bottom so that the meat or whatever is on the bottom doesn't burn. I love the way the cabbage keeps everything moist. And most of the time I eat the cabbage (I like it a bit on the browned side.) I'm definitely going to try this recipe. It sounds scrumptious.

I made this the other night and it turned out amazing! I used a little bit bigger piece of chicken for one and just had to cook it a little longer. Definitely a great recipe! I hate cooking and this was easy with very little clean up!

I made this tonight. I added some asparagus spears and home grown cherry tomatoes to the vegetables. IT WAS AMAZING!! Think next time I'm gonna use cream of mushroom soup or sour cream instead of ranch dressing! Def will make again.

Thanks so much for this recipe! It was a huge hit, even with our non-stuffing fans. Being an unusually hot summer, I cooked the packs on the grill - worked like a charm! (Allowed 45 minutes; convection grill - very moist w/no burning.) My only "creative touch" was to cut my HUGE chicken breasts into the size of thick tenders, then wrap in slices of ham lunch meat; two per pack. We have a new family favorite!

This was delicious, and my husband loved it, too! However, it took way longer than 30 minutes at 400 degrees. My chicken was totally thawed when I assembled the packets, but after 30 minutes of baking, only the outside edges were done. The middle was still completely raw :( Had to go for about an hour...

I am definately going to make this but since I'm weird about cooked ranch dressing (don't know why...it just makes my stomach turn, lol) so I think I'll use the ranch dressing mix. I've used it for so many other recipes and it always adds great flavor. Thanks for sharing this. It's look AHMazing. ;)

I decided to wrap each breast with a slice of bacon and secured it with toothpicks, I then quickly seared each breast until the bacon and chicken were golden. Next I removed the toothpicks and went on to follow the order of ingredents. Husband and kids loved this!

You place a hamburger patty on a sheet of foil. Sprinkle with salt, pepper and garlic powder. Top with slices of onions, carrots and potatoes. (I sprinkle with a little more garlic powder over veggies) Top with a pat of butter. Seal the foil and I bake at 350 for an hour. I now make this in a casserole dish where I smash a pound of meat in the bottom of a 8 x 8 dish, layer the veggies, top with patts of butter, cover and bake. I have added a little beef broth to this since I use 93/7 ground beef.

I live alone and am thinking this could be a great meal to pre-assemble and freeze. Some of my fondest memories of camping with my family is when mom would make "foil dinners". I never thought of making them with chicken. Or in the oven. I can't wait to try.

We use to make pack meals like this when we would go camping in girl scouts but we brought all the stuff to make it and put it together there and just put them on the hot coals and put some hot coals on top but just have to watch them really close cause they will burn or put them in a dutch oven. We didn't make them exactly like this but it was the same idea. :)

Wow!! Delicious! Made this while on a trip with my boyfriend. So easy to make and easy easy cleanup. Perfect. The only thing is that i put it in for 30 mins then cut it open and it was still raw. Another 20 mins did the trick. Well worth the wait. All the flavors together... mm mm mm. Will be making this again soon, thanks!

I made this tonight with a box of Uncle Ben's chicken flavored rice instead of stuffing. I cooked the rice first, just enough to absorb most of the water. I also added snow pea pods with the broccoli and I used boneless skinless chicken thighs instead of breasts. Everything else was the same. It turned out great. I also cooked mine in a disposable tin foil pan instead of a pouch. It turned out wonderful!! My husband kept saying how fancy it was.

I found this on pinterest and made it for dinner last night and it was a HUGE hit! :) The only thing I did different was season the chicken and broccoli with a little of the dry ranch seasoning powder along with the ranch dressing. My 2 yr old LOVED it and ate all of her pack and then asked for some of mine :) This was so tasty and brought back memories of when I was in Girl Scouts :) Thank you so much for posting this!

Made this last night. Cooked it in a 400 degree oven for 35 minutes as stated. The chicken was way too dry! Should it be cooked at a lower temperature?

I made this with rice tonight. I used instant brown rice, and cooked it first, then followed the recipe. It was good.. I have made it with stuffing before and it was much better. If u use rice, be sure to season it bc it was quite bland compared to using the stuffing.

Delicious! Made this for dinner tonight. I opted for placing all of the ingredients into a glass casserole dish & covered with foil. I baked it at 400 degrees for 40 minutes and it turned out perfectly.

I made this tonight and it took WAAAY longer than 35-40 min! It's been in the oven now for over an hour and the chicken is still pink in the middle. Also, my stuffing is now all watery. What the heck have I done wrong? I don't believe I've done anything wrong because I followed the instructions step by step!

Amanda, I make this almost every week. I find that small chicken breasts work well. I put mine in for an hour every time. 30 mins is def. wayyyy to short of a time. Also, the stuffing will get watery if the chicken breasts have been halved by yourself.

This was a great, easy, healthy weeknight dinner. I followed directions exactly and it turned out great. I baked mine at 375 for about 40 min. Thanks for sharing, this would be a great camping recipe too.

Oh my goodness, made this tonight and it was wonderful, EVEN though I totally forgot the bacon! I also seasoned my chicken with Tony Chachere's. My husband loved it! This is a keeper!

Thanks for the idea. I made this tonight, it took 60 mins to cook. I merinated my chic in Italian dressing overnight, then followed your recipe. Broccoli was fantastic, I think I wolf like BBQ sauce more than ranch next time. Thanks again

Making this tonight. Used Whole Wheat stuffing, skipped the cheese and bacon and used no fat Ceaser dressing because my hubby is a triathlete and doesn't eat anything fattening. Can't wait for dinner!

My family loved this! I made it tonight, without the bacon, and hubby and our 2 girls sucked it down and asked for more! I only made it without the bacon because I didn't have any in the house. Next time I'll make sure to have the bacon on hand. This is definitely a keeper!!

o.m.gosh. Tried this tonight, BF loved it! Me too. I didn't use the stuffing because he is diabetic and I have problems with wheat. Just chicken, broccoli, cheese, Food Lion precooked bacon, and sugar free buttermilk ranch dressing. I used Grill mates Seafood rub for the chicken and broccoli. I used more than a tbsp of the dressing and we had a gravy to run the chicken through for each bite. He even had more for "soppin' gravy" as he says, to run a piece of sourdough through. Yum! He said he would definitely eat this again! This is a keeper! Thank you!!

Have made this once. Didn't have broccoli, so I used cauliflower. It was great. I left out the stuffing and bacon and it was still delish! Am going to make it now with broccoli this time.

Made this again this afternoon. This time I added onion and garlic and used extra dressing for gravy. We had picked up a half of buttered garlic bread from Wal-Mart for $1.05 and he used that to soak up the extra gravy from the sauce. So good!! I don't use the stuffing due to the carbs for himself who is diabetic.

TRIED - OMG!!!! This was soo freakin' good!!! I followed the recipe to "T" except I added bell pepper. (Next time I will add sweet vidalia onions) and instead of cooking strips of bacon I used real bacon bits which worked great! also my chicken breasts were kinda thick so I cooked on 350 for 1hr. Very simple and easy to make. Thanks so much.

Just wanted to say YUM! This is now one of our family favorites. Working many hours I dont always feel like fixing a hot meal and take out is too easy and not the best on your health. This I can cook in no time flat-I can even precook the bacon ahead of time and keep in the frig., The broccoli can be chopped and ready also. Just a matter of minutes to throw together and pop in the oven while I wind down from work. Thank you so much for such a simple healthy meal!!

I have made this many times! My family and I absolutely LOVE this meal!!! the sometimes I add a little more bacon but I do not alter this recipe any more than that. It's delicious and I'm so glad I stumbled across it... so are my husband and kiddos :)

I am super happy I stumbled across this a few weeks ago on Pinterest! The hardest thing was cooking the bacon... This was much needed after a long day of Mothers Day festivities! (Happy Mothers Day btw!!) And my picky eater even loved it! This will even be great for those days I have to have dinner done by 4:30 for baseball games. WOW! This will make camping a true gourmet treat. After decades of being a Girl Scout & leader, I was getting pretty tired of the burger routine. I did do a pork chop, sweet potato, onion & mandarin orange foil dinner, but never thought of the stuffing. I'm in love with that idea!

Just had this for dinner - was so easy and very tasty ! I made without bacon. I used a packet fvranch dressing mix to seaon chi ken with salt and pepper. Just make enough room in the foil tent- I didn't and mine took longer to cook! Will be making this again def!

I love this recipe! When preparing the stuffing, I add some of the ranch and bacon bits to give it some more flavor. Also, instead of doing individual packets, I put in a 9x13 pan and cover with foil. Turns out great and never seem to have leftovers.

Loved it! My air went out in my house and I was tryin to find something quick to make and all together! Thi hit the spot! I didn't have to have the oven on for more then 45 mins and I didn't have to cook sides on the stove. To avoid making bacon I used bacon bites, still turn out great and kids loved it too. (5 and 9)

I made this last night and we LOVED it!
I used ranch dressing for 2 and Greek dressing for the other 2. I was surprised that the thick breasts were completely done and perfectly moist at 40 min. I usually tweet recipes to better suit us but I won't change a thing

I make this all the time! We aren't big broccoli fans so we use cauliflower. I've also made it with chicken flavored rice (cooked, but not all the way as it cooks in the packet) for the no stuffing fan in the family. Definitely a winner recipe!

OMG!!! These are the best!! I make them all the time on my grill. My problem is that I can't control the lowest heat level on my gas grill, and sometimes the dressing gets a little burnt on the bottom but no one every complains and eats all of it!! I've tried using two layers of foil, but still have some packets a little too done on the bottom. But this stuff is the best!!!
